We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
Ivan Gutiérrez runs Microbeneficio Quebrada Grande with his family. The very name - Microbeneficio - hides most of the story. The word means a small coffee processing station. The Gutiérrez family has combined in their hands 14 hectares of coffee farms with an installation to prepare the beans for export. In this way, nothing restricts them from experimenting and creating the most varied microlots.
The idea behind the Gutiérrez family's binzes is based on planting rare varieties such as Geisha or SL28 on the farm and then processing them into separate batches. The small scale gives the opportunity to focus on the highest possible quality. Hand harvesting, precise tracking of the fermentation and drying conditions of the beans ensures that the Gutiérrez family coffees reach the highest level of specialty.
In the pack you will find our favourite kind of coffee experiment. The Kenyan SL28 variety grown in Costa Rica. We've already had coffees like this from our favourite Hacienda Sonora, and now it's the turn of Ivan Gutiérrez, who, in our humble opinion, has upped the ante. This coffee is perfectly crafted. Sweet, deep, complex. Hats off to him.
