We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
Can coffee taste like this? Well, it can, and quite naturally. Liberika is a rare coffee species - it accounts for just 1% of the world's coffee bean production. This particular bean is the result of a collaboration between 96B - a Saigon-based coffee shop and roaster - and five farmer families from Huong Phung. Thanks to the careful production process, the beans that were once marketed as „pseudo arabica” have today achieved the status of extraordinary microlots.
The treatment of this particular batch began with anaerobic fermentation with the addition of Pichia yeast and lactic acid bacteria. The former, familiar to the wine industry (including rieslings), boost fruit aromas and create a slightly „effervescent” impression in the flavour profile. The lactic acid bacteria, on the other hand, smooth out the acidity, create a slightly yoghurt-like body impression.
After preinfusion 3 pours: 50, 100 and 50 ml.
