We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
Rodolfo E. Boillat and his daughter Ariela M Boillat run Finca Carrizal as the third and fourth generation of farmers. For more than a dozen years, they have invested in the infrastructure and know-how that allows them to produce beans annually that are among the best specialty coffees from Costa Rica.
The farm is situated between two volcanoes, Poas and Barva, to which it owes its extremely fertile and coffee-growing-friendly soil. Finca Carrizal is also bordered by two rivers, which provide constant access to the fresh water needed for coffee production. 15% of the farm's area is occupied by forest, which helps to maintain biodiversity.
