We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.

Finca Monteblanco is a 14-hectare family farm jointly run by Rodrigo Sanchez Valencia and his wife Claudia. It is also one of the epicentres of fey fermentations in Colombia. The Sanchez Valencia family has developed a complex process to achieve stable and reproducible results.

 

The first stage involves creating a „fermentation starter” - Naturally occurring yeasts are extracted from the violet Caturra fruit. These are then added to the concentrated berry juice to carry out the initial fermentation. The leavening agent thus obtained is then added to the already harvested coffee berries enclosed in 200-litre fermentation tanks. After this stage, the coffee is processed as a classic washed.

 

We've been roasting coffees from fey fermentations for a while now. Of course, they are different, but they have quite a distinct common trait in the profile. The Blueberry was an arch-surprise. We slurped and said to ourselves - wow, fudge, toffee, milk chocolate. We hadn't had anything like this before. Berries yes - in the dry aroma, in the flavour. But that's not the main feature of this coffee. It reminds us most of éclair sweets - hard but milky caramel - with a little berry on top.
