We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
Los Diecinueve coffee has been decaffeinated using the so-called sugarcane method, which uses ethyl acetate (EA), a natural compound extracted from sugar cane. The process begins with the preparation of the green beans: they are gently steam-treated, which opens up their structure and allows caffeine to be effectively removed. They are then immersed in a solution of ethyl acetate, which binds to the caffeine and removes it from inside the grain.
After several extraction cycles, the beans are steamed again to completely remove any residual EA, and then dried, cooled and polished to preserve quality. Thanks to this method, the coffee retains its full flavour, texture and aroma, without the use of aggressive chemicals. Sugarcane decaf is one of the purest and most neutral decaffeination methods available on the market.
The Los Diecinueve project is the result of a collaboration between 19 farmers in Colombia's Huila region. Their grains - mainly of the Castillo, Colombia and Caturra varieties - come from plantations at altitudes between 1,400 and 2,000 m. It is a micro-regional blend, created for the decaffeination process, which requires larger batches of raw material.
