The longer our adventure with specialty coffees continues, the more we appreciate such beans. Sweet, chocolatey and fruity. Like chocolates from a box of chocolates. Deep and balanced.
Jose Antonio Salaverria and his sons, Andres Salaverria and Jose Antonio Salaverria the younger are fifth and sixth generation coffee producers. They have three main coffee production areas around the Santa Ana volcano in El Salvador - Santa Rita, San Francisco and El Molino. The San Francisco farm covers an area of 294 hectares, which are divided into so-called 'tablones' (planks), from which the coffee is harvested separately and processed as microlots. The El Pedregal tablon is one of the higher-lying sections of the San Francisco farm.
