We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
Finca El Descanso, managed by Jose Heider Contreras Mancipe, is located in Filo de Salazar in the Guadalupe region, Huila, at an altitude of 1,600 m. The seven-hectare farm was established in 2015, four hectares of which are planted with 20,000 trees of the Castillo and Bourbon Rosado varieties. Jose Heider, a representative of the second generation of growers, runs the farm together with the Contreras Verdugo family, employing two permanent workers and four seasonal pickers. He is a member of the Coocentral cooperative and his current investment priority is to improve housing on the farm.
Harvesting is carried out by hand, and the fruit first undergoes a selection in water before being left overnight in a hopper for anaerobic fermentation lasting 36 hours. After two washes, the grains are dried for about 20 days in a marquesina - a covered, airy structure that allows even drying.
