We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
Owned by the Inoi Cooperative, the Kaguyu Wash Station is located at the foot of Mount Kenya, on the outskirts of Kerugoya township. This western part of Kirinyaga County borders the equally famous Nyeri County and boasts some of the most fertile soils in the country.
Once the coffee cherries arrive at the washing station, they are manually sorted and any unripe or damaged fruit is removed. The cherries are then stripped of their pulp using a mechanical pulper and the beans are then fermented in tanks. Once fermentation is complete, they are washed in channels with water and sorted into batches according to size. The drying process takes between 10 and 20 days.
First pour (bloom) 50g; second pour up to 250g from 0:40 to 1:10. After finishing the second pour, stir the dripper twice.
