We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
This unique coffee comes from the Gedeb region of Ethiopia's Gedeo zone, where at altitudes of 1950-2100m, small farms (averaging 2 hectares) grow coffee plants on a total area of 1,657 hectares. The coffee trees grow in the shade of native Abyssinian trees and banana trees, benefiting from fertile, well-drained soil with a reddish-brown colour - ideal for growing high-quality coffee.
The beans are processed at the Worka-Wuri Chelchele station. After careful selection, the coffee cherries are shelled using an Agaard machine that sorts them by density. They are then fermented for 36-48 hours, after which they are washed to remove any remaining pulp. Drying takes place on traditional African tables for 10-15 days. The grains are turned daily and protected from excessive sun and rain. Finally, they are aged for a month in jute bags on bamboo pallets until the moisture content stabilises.
The Chelchele station has been in operation since 2012. We receive our coffee through BNT Industry & Trading PLC, an exporter that controls the entire process: from harvesting to loading onto ships. BNT has its own warehouses and mill, which allows it to maintain full control over the quality of each batch.
