We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
On her small farm La Nosha, located high in Peru's Cajamarca region, Mareyla Fernandez grows the Bourbon de Colasay variety. She harvests the coffee herself and processes it on her own farm - from depulping to fermentation to drying.
Through the work of the local Comité, Mareyla co-creates a network of farmers focused on quality. This is coffee that is pure, carefully prepared and full of character - the result of hands, not industry.
