We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
Finca El Mirador is a farm located in Palestina, in the Huila region of Colombia, with a coffee-growing tradition dating back three generations. It has been managed for 18 years by Elkin Guzman, who cultivates a variety of coffee on 30 hectares at an altitude of 1550-1680 m. Fertile soils and partial shade favour the production of complex and expressive coffees with a unique character.
The harvested, fully ripe cherries are first subjected to a 60-hour anaerobic fermentation. In parallel, a special „mother culture” is prepared, created from pineapple, banana, coconut juice and panels, which ferments for four days. This is then used to co-ferment the cherries for a further 270 hours, giving the brew a rich fruity note. The process finishes by drying in thin layers for three days, with regular stirring, until the moisture content reaches 10.5-11%.
