We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
The Siko washing station was established in 2017 in the village of the same name. Administratively, it is located in the Uraga uereda, in the Oromia region. In the division of coffee regions, it is Guji. The station buys coffee cherries from 500 local farmers, whose crops are located at an altitude of 2100-2250m. The average farm is between 0.5 and 2 hectares in size. The surrounding area has an abundance of fertile, red soil and is also very sunny, which produces high-quality fruit.
The coffee cherries are hand-picked and then also hand-sorted. Fermentation takes between 24 and 72 hours - depending on the weather. They are then rinsed in channels with water. The lower density (and therefore quality) beans are removed, only the best high density beans remain. Drying usually takes about 13 days. The final stage is the manual sorting of defects.
