We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
The coffee comes from the village of Shantawene in the Bensa region, Sidama. It grew on a farm owned by Tariku Kare, who is primarily involved in coffee processing and export. In addition to his own farm, he runs two washing stations in the Sidamo and West Arsi regions and his company, Tariku Kare Exporters, has been awarded the Africa Fine Coffee Association in recognition of the quality of coffees exported.
Tariku Farm is located at an altitude between 1,900 and 2,150 metres above sea level, which is conducive to the production of top-grade coffees (classified as grade 1 in Ethiopia). The area is characterised by fertile, brownish-red soil with good drainage, ideal for growing local varieties. Coffee grown in the Sidama region is known for its distinctive character - usually characterised by sweetness, balanced acidity and spice or wine-fruit notes.
Harvesting is carried out from October to January. Only selective manual harvesting is used to achieve the highest possible quality in the cup. The coffees are processed using the wet method and the natural method, using a direct spring water source.
