We try not to keep coffee on the shelves for long, so if we don't have a particular coffee in stock, we have to replenish the order after the roasting day. We roast on Tuesdays and Thursdays, pack the coffee and send it out on Wednesdays and Fridays.
Banko Gotiti is a washing station located in the Gedeb woreda, in the Gedeo zone - this area consistently delivers the highest quality grain. All thanks to a combination of several factors. Firstly, the extensive cultivation on small farms encourages a natural ripening process. Secondly, the cultivation altitude of around 2,000 metres above sea level translates into the density of the grains and their saturation with aromatic compounds. Finally - the very careful processing eliminates any defective fruit and brings out pure, transparent flavours in the grains.
Hario Switch method. Preinfuse 100g, pour on closed switch, open at 0:10. At 0:40 close the switch and pour in the rest of the water. We brew until 2:30 and then open the switch.
